A Forge de Laguiole table knife designed by Olivier Gagnère for the two Michelin star restaurant JY'S and its chef Jean-Yves Schillinger. This model has a black acrylic handle and two brass plates.The grandson of restaurant owners and son of a chef at the eponymous restaurant awarded two Michelin Stars, Jean-Yves Schillinger is a chef with a career strewn with stars. After having worked in some of the most beautiful French restaurants, the Chef flew to New York to open two restaurants. In 2002 he returned to his roots and with his wife Kathia they fell in love with the charm of a building along the Lauch River.
